Masala Chai ( Indian Spiced Tea ) for my spring sniffles

After a prolonged winter, spring is finally here and so are my allergies. Actually, the official start date of spring here in Canada was almost a month ago but it's been just a few days since it started feeling like spring ........lovely weather, blooming trees, hares, squirrels and robins in our backyard..........everything seems perfect except for my allergy to pollen.

Unlike most people in my family or in fact the majority of people of South Asian origin, usually I don't care much for any kind of tea. However, whenever I have to combat my constant sniffling, sneezing and watery eyes , I turn to this soothing masala chai like I have been doing  every morning for the past few days. It contains ginger which is well known for curing allergies, cold and flu along with aromatic spices which make it a really soul satisfying beverage.

Like with most forms of tea, this recipe can be modified to suit one's personal preferences.You can alter the quantity of spices or even omit any spice if you wish. If you prefer stronger tea, you might like to simmer it for a couple of minutes after bringing it to a boil, instead of just steeping the tea.  In fact, most Indians seem to have their own version of masala chai . Masala Chai
(Indian Spiced Tea )
Ingredients: ( For making 1 cup )
Water - 1/2 cup
Milk - 1/2 cup
Ginger, peeled - 1/2 inch piece
Green cardamom , split open from one side - 1
Clove - 1
Cinnamon - 1/2 inch piece
Loose Indian Black Tea - 2 level teaspoons
Sugar - 1 to 1 1/2 teaspoons (according to taste)

Method:
1) Combine the water, milk, ginger , cardamom,clove, cinnamon in a saucepan and bring to a boil over medium heat. Keep a close watch so that it does not boil over and spill.
2) Add the tea leaves. Switch off the flame. Cover the pot and let the tea steep for 3-5 minutes . You can also cover the pot and simmer on low heat for a couple of minutes to get the colour and strength that you prefer.
3) Strain into a cup and add sugar. Enjoy !

Pudina Pulao ( Mint Rice )

Like in most Indian households, rice is one of the staple dishes on our dinner table . I'm always looking out for simple ways to bring some variety to rice dishes, especially as accompaniments to curries. This aromatic mint pulao is extremely simple to make and uses very basic ingredients. This time I cooked it in extra-virgin olive oil which imparts it's own subtle flavor and colour but  it is equally delicious when cooked in any flavourless oil such as canola.

Melting Moments Cookies

It's been over a month since I moved to my new home and in between all the packing, unpacking, shopping and organising, blogging took a backseat. Now that the house is in order , I am hoping to get back to a regular blogging schedule.

I made these cookies a while ago but  never got around to posting the recipe. They use the same basic ingredients as my Piped Butter Cookies , except that some of the flour is substituted with cornstarch which gives this cookies  their light, airy, 'melt-in-the-mouth' texture.Also, they are eggless. They are usually dusted generously with confectioners' sugar. However, next time I think I shall go easy on the confectioners' sugar as I don't like it flying out of my mouth when I  bite into the cookies.

Ingredients: For about 3 dozen cookies
All Purpose Flour - 1 1/2 cups (195 grams)
Cornstarch/Cornflour - 1/2 cup (60 grams)
Salt - 1/4 teaspoon
Confectioners'/Icing Sugar - 1/4 cup ( 30 grams)
Unsalted butter, room temperature - 1/2 cup (227 grams)
Vanilla extract - 1 teaspoon

For topping:
Confectioners'/Icing Sugar -1/4 cup (30 grams)

Method:
1) Whisk together the flour, cornstarch and salt.

2) In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until creamy and smooth (about 2 minutes). Beat in the vanilla extract. Add the flour mixture gradually and beat just until incorporated.

3) Cover and refrigerate the batter for an hour or two, or until firm.

4) Preheat oven to 350 degrees F (177 degrees C) and place rack in centre of oven. Line two baking sheets with parchment paper.

5) When batter is firm, form into 1 inch (2.5 cm) balls and place the cookies on the prepared baking sheets, spacing about 1 inch apart. Bake for about 10 -14 minutes or until the edges of the cookies just start to brown.

6) Remove from oven and place on a wire rack to cool for about 3-5 minutes.  Carefully transfer the cookies to a wire rack that is placed over a sheet of parchment or wax paper.Put the confectioners sugar in a fine strainer or sieve and sprinkle the tops of the cookies with the sugar.

These cookies can be kept in an airtight jar for about a couple of weeks.

As a mother of two daughters suffering from severe eczema since infancy, no one knows it better than me. Even if you are fortunate enough not to suffer from any serious skin problem, it's always good to know that healthy, glowing skin comes from following a holistic diet and lifestyle and not lotions or potions.

Pineapple Upside Down Cake

It has been snowing like crazy in Mississauga for the past few days with temperatures dropping to  -15 degrees Celsius even during the daytime. It's the perfect time of the year to turn on the oven for some baked treats. However, for the past two weeks I have been really busy looking for a new house . Just a couple of days ago, we found one that suits us Alhamdolillah (all praises to God). Now comes the tedious task of packing and moving. Wish me luck !

 

 In the midst of all the chaos, I was itching to do some baking but since I didn't really have the time to try anything fancier, I turned to this Classic Pineapple Upside Down Cake which is one of my husband's favourites, really moist and fluffy. After all,nothing beats the classics.
